
Chocolate Meringues
2 egg whites
1/4 teaspoon salt
1/4 teaspoon vanilla
1 cup sifted confectioners' sugar
2 cups corn flakes
1 cup shredded coconut
1-6 ounce package (1 cup) semi-sweet chocolate pieces
BEAT egg whites, salt, and vanilla until soft peaks form. GRADUALLY add
confectioners' sugar, BEATING till peaks are stiff. FOLD in corn flakes, coconut,
and 2/3 cup chocolate pieces. DROP by heaping teaspoons on well-greased
cookie sheet. TOP each cookie with a few of the remaining chocolate pieces.
BAKE in slow oven (300°F) 20 minutes, or till lightly browned. COOL slightly
before removing from cookie sheet.
